Purple Pig executive chef Effy Medrano is a native of Toluca, Mexico. But when he moved to Chicago and began working as a teenager at Spiaggia, it set him on a path to cooking Mediterranean cuisine.
The colors and flavors of Latino cuisine can be found all over Chicago now, but it hasn’t always been considered worthy of fine dining. Chef Mark Mendez of Libertad said Latino cuisine deserves a spot among the world’s great culinary traditions.
Chef Carlos Garza heads the kitchen at one of Chicago’s biggest and most recognizable restaurants, Carnivale. He said Carnivale’s pan-Latin menu reflects the way he thinks about food — a connecting of cultures.
